I recently tried the Summer Farro Salad with Grilled Steak recipe from Good Housekeeping, and it ended up tasting amazing! Topped with a colourful veggie medley, this steak and grains kale salad not only checks all the healthy boxes, but it is also delicious. I am definitely doing to make this again over the summer.

The following ingredients were used:
- 1 c. farro
- 2 medium bell peppers
- 5 tbsp. olive oil
- 1 1/2 lb. boneless beef top loin steaks, thinly sliced
- 1 1/2 c. corn
- 4 c. kale leaves, chopped with ribs removed
- 1/4 c. balsamic vinegar
- Serves 6
