My latest cooking session was the recipe for these scrumptious Chocolate Peppermint Brownies from The Gunny Sack. These brownies have a fudgy chocolate brownie base and melt-in-your-mouth peppermint buttercream frosting topped with smooth chocolate mint icing and crushed candy canes. It was a total hit with my friends and family! I will be making these again for Christmas!

The following ingredients were used:
Brownies:
- 18.4 oz package Pillsbury Chocolate Fudge Brownie Mix
- 2/3 cup oil
- 1/4 cup brewed coffee cooled (OR use water instead)
- 2 eggs
Peppermint Buttercream Frosting:
- 1 cup butter softened (not melted)
- 4 cups powdered sugar
- 3 tbsp milk
- 1 tsp peppermint extract
- red food coloring
Chocolate Peppermint Icing:
- 1 1/2 cups chocolate chips
- 1/2 cup butter
- 2 tsp light corn syrup
- 1/4 tsp peppermint extract
Garnish:
- 1/4 cup crushed candy canes
- Easy to make
- Yields 36 servings
