While on the hunt for unique new recipes on Delish, I came across the page for Reuben Egg Rolls and was so enticed, I just had to try them.
Egg rolls have sounded quite intimidating before, but they're actually not too difficult to work with, and are definitely worth the effort. They're so delicious! It'll be a great option to serve as Super Bowl snacks.
The recipe for Reuben Egg Rolls is fairly simple to make, and yields 16 servings with a prep time of 10 minutes and a total time of 40 minutes. If anyone is interested in checking out the instructions, please click on the image up above.
The following ingredients were used:
- 4 oz. cream cheese, softened
- 3 tbsp. Russian dressing, plus more for serving
- 1 tbsp. prepared horseradish
- 3/4 lb. sliced corned beef, chopped
- 1 1/2 c. shredded Swiss cheese
- 1/2 c. sauerkraut, drained
- 2 tbsp. freshly chopped chives
- 16 egg roll wrappers
- Vegetable oil, for frying
- Yields 16 servings

I had a great time making these egg rolls. They tasted delicious and were quite easy to make. They'll make an excellent snack for years to come!
