With the warm weather ramping up, it's the perfect time to try out some new refreshing salad recipes! When I came across the recipe for Coconut Ranch Kale Salad on Delish, I knew I had to give it a try.
This salad is like many of the best our there, loaded with roasted veggies and topped with a creamy dressing. It's a special vegan coconut ranch sauce which is absolutely irresistible. The crunchy chickpeas are a special treat too!

The following ingredients were used:
FOR COCONUT RANCH
- 1/4 c. coconut milk
- 1/4 c. vegan mayonaise
- 1 tbsp. freshly chopped parsley
- 1 tbsp. freshly chopped chives
- 2 tsp. freshly chopped dill
- 1/2 tsp. garlic powder
- 1/4 tsp. onion powder
- Pinch cayenne pepper
- Kosher salt
- Freshly ground black pepper
FOR SALAD:
- 1 large sweet potato, cut in 1/4" thick half moons
- 1 tbsp. plus 2 tsp extra-virgin olive oil, divided
- 1 1/2 tsp. chili powder, divided
- Kosher salt
- Freshly ground black pepper
- 1 (15-oz.) can chickpeas, drained and rinsed
- 1 large bunch curly kale, washed and dried, stems removed
- Avocado, thinly sliced
- Shaved vegan parmesan
- Loaded with roasted veggies and crunchy chickpeas
- Features a vegan coconut ranch sauce
- Easily modifiable
- Healthy and delicious
I just love the texture and taste of this healthy salad. It's easy to make and tastes so scrumptious! I highly recommend giving it a try this spring or summer season. It's certainly going to be a summertime fave for me.
